No-Bake Red Velvet Cupcake with Cream Cheese Frosting

DIY- No-Bake Red Velvet Cupcake. Though I admit my photos here are crappy ( honestly!), I feel the obligation to post this No-Bake Red Velvet Cupcake with Cream Cheese Frosting for everyone to savor this no-bake delight. The joy that I felt in making this cupcake was overwhelming. I already told you, though I'm not a baker, but with this recipe I did satisfy my cravings! Imagine the aroma of a freshly steamed cupcake! Hhmmmm. :)





























Ingredients:

Cake

2 ½ cups of all-purpose flour (or cake flour)
¼ cup of cocoa powder
1 ½ cups of white sugar
2 tsp of baking powder
1 tsp of baking soda
½ tsp of salt
½ cup of butter, softened at room temperature
1 cup of vegetable oil
2 tsp of White Distilled Vinegar
1 cup of buttermilk
Red Food Coloring
2 tsp of vanilla extract


Cream Cheese Frosting
4 cups of confectioner’s sugar
8 oz of cream cheese, softened at room temperature
4 Tbsp of butter, softened at room temperature
2 Tbsp of milk
1 tsp of vanilla extract

Procedure:

1. Sift together the flour, cocoa powder, baking powder, baking soda and salt. Then set aside.

2. Combine butter, sugar and vegetable oil. Mix well.

3. In the butter mixture, add eggs and vanilla, then continue mixing.

4. Add the food coloring to the buttermilk mixture (or the milk+ vinegar substitute).

5.Mix the flour mixture, butter mixture, and red color mixture.

6. Transfer to your mold. Steam for about 20 minutes, depending upon the size of the mold. For better judgment, when an inserted toothpick comes out clean, then it's done! :)

7. Prepare the frosting while waiting for the steamed cake. Mix the cream cheese, butter, vanilla and milk.

8. Add the confectioners sugar. Mix properly until it reaches soft peak. Refrigerate for at least 20 minutes.

9. Spread the frosting to your desired thickness and design. :)

TIPS: I know that buttermilk is costly, so you can substitute it with 1 cup milk + 1 tbsp vinegar, mix then set aside for at least 10 minutes.  For easy removal of cake from the mold, wipe the mold with butter before you transfer the batter. You can also use silicon-coated molds for your cupcakes. It comes with different shapes and sizes. I bought this heart-shape cupcake molds cheap. :)
