Simple DIY Cheesy Yema Cake

Since I'm a confessed cheese and yema (yolk) addict, a cheesy yema cake is a heaven-sent. When you eat it, it's like floating in the cloud nine and momentarily you forget all the problems in the world. I mean it!

Here's a simple, still no-bake recipe of Cheesy Yema Cake adopted from Steamed - No bake Cakes, and other No-bake Goodies.



Ingredients:

Flour mixture
1 1/4 cups Cake Flour
1 1/2 tsps Baking Bowder
1/2 tsp Salt
3/8 cup White Sugar

Egg white mixture:
4 Egg Whites
1 tsp Calamansi juice (or Lemon)
1/4 cup White Sugar

Egg yolk mixture:
4 Egg Yolks
1/3 cup Milk
1/4 cup Vegetable oil
1/2 tsp Vanilla Extract
1/2 tsp Calamansi juice (or Lemon)

For the frosting:
2 Egg Yolks
1 1/2 cups Condensed Milk
1/4 cup Butter
1/2 tsp Vanilla Extract
2 drops of Almond Extract (optional)
1 box of Cheese (Cheddar)

Procedure:

1. Combine all the ingredients in the flour mixture. Sift to remove the lumps.


2. In another bowl, mix well all the ingredients in the egg yolk mixture. It looks like the picture below.


3. For the egg white mixture, use a clean and DRY mixing bowl and mixer, beat the egg whites and add calamansi until foamy.


4. Gradually add the sugar (e.g. 1 tablespoon at a time) and continue beating until the mixture forms soft peak.


5. Combine the two mixtures from step 1 and 2 ( flour mixture and egg yolk mixtures). Mix well.


6. Slowly fold the egg white mix into batter. Make it a point that all the ingredients are mix well. Slowly. Slowly. Slowly.




7. Steamed for at least 30 minutes or until an inserted toothpick comes out clean.

8. For the frosting mixture, put all the ingredients in a pan and cook under low heat. Combine steadily until it thickens.


8. Cool down the steamed cake for a maximum of 15 minutes before removing from the pan and slice it into halves.


9. Spread the frosting all over the cake and put on top the other half. Cover it with grated cheese as thick as you want it. This is my favorite part! :)


You can share it with your best friend, thus sharing the calories.  Or you can keep it all for yourself. hehehe You can also use a round pan in steaming to have a mouthwatering Cheesy Yema Cake like below.
